The experimental vineyard
The estate on which the Cascina Meraviglia is located
totals five hectares, of which 2.5 are under vine, an experimental
vineyard that features the cultivation of 37 different native
and international grape varieties.
Specific, in-depth research studies are conducted
on the varieties grown, the aim being to determine the precise moment
at which the genomes of the single rape varieties are at maximal
expression in a specific terroir. Other studies have the objective
of providing insight into the final wine produced relative to its
short, medium and long term life span.
The experimental cellar:
the natural and logical extension of the experimental cellar
project, this is where a small army of Genesis fermenter robots
(36 units) are employed to quickly identify the ideal course of
fermentation for the different musts relative to terroir and vintage,
providing the winemaker with all the necessary information to reach
the very heart of the wine. |
